The Roaster’s Secret: Keeping Lone Bear’s Beans Ready for Adventure

Hey everyone, Dave and Jen here from Les Cheneaux Coffee Roasters! We’re the folks who turn those green little seeds into the amazing coffee you love from Lone Bear. Our partnership is all about making sure you get the best cup out there, especially when you’re miles away from civilization. But let me tell you, getting a perfect roast means nothing if we don't start with perfect beans. Our job begins long before the heat is on, with the nerdy, but crucial, business of storing our green coffee.

Think of those green beans as dormant flavor bombs—all the magic is packed inside, but it's super fragile. Our first priority is to keep them protected from three things that absolutely destroy flavor: light, oxygen, and moisture. These aren't just minor annoyances; they're the elements that make coffee taste stale or dull. To fight back, the moment a fresh batch arrives, we seal it up immediately. The beans go into airtight, opaque containers because we need to completely lock out the air (which causes staling) and block every bit of light (which speeds up aging). This commitment ensures that whether you choose a bold dark roast or a vibrant light roast, the core flavor is never compromised.

Beyond the container, the environment is everything. We’ve dedicated a special area here in the shop that’s basically a sanctuary for our coffee. It’s cool, dark, and dry, and we work hard to keep the temperature stable and the humidity low. Why the fuss? Well, green beans hate temperature swings. When they repeatedly heat up and cool down, they expand and contract, which essentially breaks down the internal structure. That damage is permanent, and it results in a "woody" flavor that no roaster can fix. Our stable storage puts the flavor aging on hold.

This meticulous care is the only way we can confidently uphold the Lone Bear promise of roasting to order, every order. Since your coffee is custom-roasted just for you, we need to know the beans we load into the roaster are in absolutely peak condition. Our storage methods are the insurance policy that guarantees the raw ingredients are still vibrant and ready to unleash their full, delicious potential when we send you a freshly roasted bag of Basecamp.

    Our engine of adventure, the SF-25 by San Franciscan Roaster Company, is the meticulous machine that brings the flavor to life for Lone Bear Coffee. We chose this American-made beast, built from robust Schedule 40 steel, because its high conductivity and responsive heat controls allow us to achieve extremely precise roast profiles—a critical factor in specialty roasting. While the machine can handle up to 25 pounds, we stick to 10-pound and 20-pound batches. This smaller size gives us the necessary agility to fine-tune the roast, ensuring every single bean develops maximum flavor and guaranteeing ultimate freshness for your roast-to-order adventure fuel.
